Something about colder days just brings out the laziest version of myself. I want to just lay on the couch under a big, warm blanket and binge watch Teen Mom. (please tell me I’m not the only almost 3o year old that still keeps up with that show). My cold weather laziness carries over into the kitchen and I look for my crock pot or other easy recipes for dinner.
This Tortellini Garlic Soup recipe is so simple and so good! It takes less time than any crockpot recipe I know of, so it’s a go-to on days when I put off figuring out dinner, which is pretty often. Hope you enjoy this one and let me know what you think if you try it!
1 small white onion, diced
3 cloves minced garlic
4 cups chicken broth
28 oz can diced tomatoes
1 15 oz can white beans, drained + rinsed
1 cup heavy cream
1/4 cup grated parmesan cheese
1 tablespoon italian seasoning
1 teaspoon salt
1/4 teaspoon pepper
2 cups cooked chicken (use rotisserie to save time!)
9 oz refrigerated tortellini
2 cups spinach
1 . Heat the butter in a large pot over medium heat. Add onion + garlic + cook until softened. Add chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, italian seasoning, salt a+ pepper. Bring to a simmer.
2 . Add the chicken, tortellini + spinach. Let simmer for 10 minutes to thicken up + for the tortellini to cook. Enjoy!
