Mexican Stuffed Shells

I love making traditional stuffed shells. They’re so good and making a huge dish of them helps make lunches for the next day or leftovers for dinner the next night. Instead of making stuffed shells the usual way, I decided to try a little something different and put a taco twist on them. Here’s the recipe!


1 lb ground turkey
1 packet taco seasoning
4 oz cream cheese
About 15 jumbo taco shells
1 1/2 cup salsa
1 cup taco sauce
1 cup cheddar cheese shredded
1 cup Monterrey Jack shredded cheese
3 green onions
Sour Cream


1. Preheat oven to 350 degrees
2. Cook ground turkey in frying pan & add taco seasoning (prepare according to package directions)
3. Add cream cheese, cover & simmer until cheese is melted
4. Mix well. Set aside & let completely cool
5. Cook pasta shells according to directions
6. Drain & set shells out individually on baking sheet
7. Pour salsa on bottom of 9×13 baking dish
8. Stuff each shell with meat mixture & place shells in dish open side up
9. Cover shells with taco sauce, then cover with foil & bake for 30 minutes
10. Remove foil & add shredded cheese & bake for 10-15 more minutes
*Optional: Top with green onions, black olives, sour cream, more salsa
