To be completely honest, these had me at “no-bake”. I’m a fan of fast and easy recipes and this is one of them! I’ve made these many times and I love keeping them in the fridge to grab when we’re headed out the door. My kids love them, too! This recipe is pretty basic and super flexible, so if you have allergies to avoid, ingredients can be easily substituted for other ones.
1 cup dry oats
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 ground flax seeds
1/2 mini chocolate chips
(we added mini M&Ms too, because we’re extra like that)
1/3 cup honey
1 tablespoon chia seeds
1 teaspoon vanilla extract
1. Combine all ingredients in a mixing bowl until thoroughly mixed.
2. Cover and chill in refrigerator for 30 minutes.
3. Take mixture out of refrigerator and roll into whatever size you wish.
I like to package them in snack size Ziplock bags in the refrigerator. Super easy to just grab and go!
