Egg, Ham & Cheese Breakfast Muffins
I am definitely NOT a morning person. Every day, my three year old strolls her happy, well-rested self into my bedroom and says (at least 12 times), “I think it’s morning time, mom!” Luckily I can easily convince her to get into bed with me for snuggles, which gives me a few more minutes to officially wake up. Then we go get baby sister out of her crib and make our way downstairs. Immediately, I start trying to figure out what our breakfast will be. The girls love eggs, so this recipe is right up our alley. I’ve relied on this recipe for a couple of other reasons, too:

This is one of my favorite projects my husband and I have worked on. The mudroom was a huge selling point for us when we bought our home; it is the perfect little spot to drop our bags and kick off our shoes when we get home. It also has a wall of shelves to serve as our pantry, which is great because our previous house didn’t have this type of space for food storage. Unfortunately, after a few months of use, this room looked ROUGH. The ‘before’ pictures are actually pretty embarrassing. Judge away, my friends. There is one song that comes to mind when I look back at the before pictures:

It’s not officially summer here in Virginia yet, but the weather is telling me otherwise. Next week is supposed to be in the 90’s and everyone knows there’s nothing a pregnant woman likes to do more than chase small children around in the summer heat. Whoop whoop! No worries; we’ll be beating the heat with sprinklers, splash toys and cool treats in the front yard. (We are totally that redneck family in our neighborhood, whatevs).
