We are finally getting vegetables from our garden and I have to say, it feels like such an accomplishment. I usually can’t keep plants alive very long, so I’m pretty excited about this!
When we moved into this house about 2 years ago, there were raised beds in our yard, but they were pretty overgrown. There were lots of mint plants; apparently they grow and spread easily. It smelt minty fresh all around our yard. Eventually we decided it was time for a make-over and we wanted to plant things that we would use more. My husband built a cute little fenced in raised bed garden in place of the plastic raised beds that were once there.
It looks a little different now that we have (way too many) plants. Better safe than sorry, right?
I’ve been trying to incorporate cucumbers into a lot of what we eat recently because a lot of those came in at once. Luckily my one year old likes cucumbers, so we snack on them almost daily. One of my favorite summer snacks is summer salad. It’s just so good — and fresh! There are lots of variations to this recipe, but here’s how I like mine:
4 medium tomatoes, cut up
2 medium cucumbers, sliced
2 onions, sliced
2 Tbsp vinegar
1/4 cup olive oil
2 Tbsp sugar (optional)
1 tsp salt
1/2 tsp black pepper
2 tsp parsley
In a bowl, mix together the vinegar, oil, sugar, salt, pepper & parsley. Add tomatoes, cucumbers & onions. Toss together until the vegetables are coated with the mixture. I like to let it all marinate for at least an hour or two.
*I also like to use a mason jar to mix it all together and just pop it right into the fridge until I want to snack on it later.
